August Class Schedule
What to do with all that summer squash....and a culinary trip south of the border
Hello Friends,
My August class schedule is up today. The Olympics will be drawing to a close at the end of the week…and you might be looking for something else that you can do to fill up that time that will be left open in your schedule. If so, I hope you will consider signing up for one of my new classes!
Ways with Zucchini
The first class (coming up next Tuesday, August 13) will feature four different recipes for zucchini and/or summer squash. The summer squashes are notoriously prolific. If you grow your own…you probably have more than you know what to do with. And the stalls at the markets are overflowing with summer squash this time of year. In this class I will cover some interesting ways to enjoy all of that abundance.

Dinner South of the Border
The second class (on Tuesday, August 27) is intended to be a meal you can make and share with friends…sort of a last blast of summer. You can watch…or cook along…and be ready to make it for your friends over the Labor Day weekend. All the food is casual…and takes its inspiration from southern, beach vacation, locations.
Queso Fundido—a skillet filled with roasted poblano rajas, delicious melting cheeses and pepitas. (It can be made entirely ahead and heated at the last minute when your guests arrive)
Salmon Veracruz—a simple salmon preparation with a sauce of the vine ripened tomatoes of summer, green olives and capers
Piña Colada Cupcakes—tender coconut and pineapple cake, topped with a big swirl of Malibu cream cheese frosting and toasted coconut
