Summer Pasta Sauces....and a culinary trip to the South of France
Hello Friends,
It has been a while! I hope everyone has had a wonderful spring…and a great start to the summer. I have been unusually busy with normal work…plus the addition of my new newsletter. But I am back with classes…and I have two to offer you during the month of July!
Favorite Summer Pasta Sauces
The first class (coming up next Tuesday, July 16) will feature some of my favorite summer pasta sauces. The recipes in this class have been in my repertoire for years. I turn to them again and again because they are simple (each features one main seasonal vegetable), quick, and so satisfying.

Provençal Summer Feast
The second class (on Monday, July 29) is pure fun (for me at least!). I had the privilege of working in Provence many years ago, and in this class I will be sharing some of my favorite foods from the region.
Pissaladière—a flatbread/pizza appetizer topped with onions (that have been cooked with thyme until soft and sweet) and strewn sparingly with olives and anchovies.
Chicken Breasts stuffed with soft Goat Cheese and Prosciutto. I’ll be demonstrating how to cut up a chicken to produce a breast that retains the little short wing joint and the skin (so there is something to stuff!).
Tian Provençal—a beautiful vegetable gratin of layers of fresh tomato, eggplant, zucchini & summer squash.
Honey Ice Cream with Oven Roasted Summer Fruits and Almond Praline. A delicious, simple, seasonal dessert….just like one you would be served if you were on a patio in Provence. I’ll teach the ice cream base…how to roast whatever fruits are available…and a quick praline of caramelized almonds to dress it up.
